I don't want you to think that all we eat is "Sweets," so first I am going to share with you the following photo.
We do eat a lot of Beef. Cheeseburger with bacon!
So with that I being said I want to share with you one of our family favorite cupcake recipes. Our cupcakes were featured on my good friend's blog: Faith Family and Beef.
Cupcakes:
1 1/2 cup Flour
1/4 cup Baking Cocoa
1/2 tsp. Salt
1 cup Sugar
1 tsp. Baking Soda
1 Egg
1 cup Water
1 tsp. Vinegar
1/3 cup Oil (I use Applesauce)
1 tsp. Vanilla
Preheat oven to 350 degrees.
Combine cream cheese, sugar, egg, vanilla and salt. Blend until smooth. Mix in chocolate chips. Set to the side.
Sift together flour, baking cocoa, and salt. Add soda. Add egg, water, vinegar and oil. Mix. Add vanilla. Beat until combined. Fill paper lined tins half full of chocolate batter. Drop a heaping teaspoon of cream cheese mixture in the center of each cupcake. Sprinkle with sugar and chopped almonds if desired. Bake at 350 degrees for 25 minutes. Refrigerate leftovers.
You may choose to frost these with any kind of frosting, but they are good with none.
