3 lbs. of Ground Beef, Cooked and drained
1 Can of Sweet Corn, drained
1 can of Black Beans, drained
8 Cups of Cooked Rice ( I use Minute Rice)
Diced Tomatoes, Avocado, Cheese and Onions to taste
Lime juice to taste
Cook rice according to package.
Brown ground Beef until fully cooked at 155 degree F. Drain the fat off. Mix Chugwater Chili
or Taco Seasoning with ground beef. Add corn and black beans. Stir until fully mixed, over low heat, to combine all ingredients.
Fluff rice with a fork. Serve in a bowl. Top rice with meat mixture, then add a few drops of lime juice if desired. Add diced avocado, tomatoes, onions (if desired) and Cheese.
I serve with tortilla chips!
